The U-haul 5x8 trailer has a maximum GVWR (maximum recommended weight of trailer plus contents) of 2700 lbs. The trailer's tongue weight, which could be anywhere from 100 to 400 or so lbs will cause the rear suspension of your Highlander to squat to a certain degree. I'd go with a ball mount that provides a 2 inch rise to account for the anywhere between 1-3 inches of squat you'll experience. This will leave the trailer close enough to level that everything will work fine.
We offer the Curt # C45152 Fusion ball mount that includes the 2 inch ball which is permanently installed in the rise position. The hitch pin is also included.
U-haul typically uses adjustable couplers on their utility trailers, so the 2 inch ball provided by the # C45152 will work well for you.
If you don't already have a trailer wiring harness, I'd recommend # C76CR.
