The best solution we have is going to be a 1-1/4 inch hitch like the Draw Tite part # 24824 with a new bike rack as there isn't a 2 inch hitch that fits your 2008 Volkswagen Eos and the use of a hitch adapter cuts the hitch capacity in half plus adds movement so that's not recommended. I did some checking and all models of your 2010 Volkswagen Eos can be towed behind a motorhome only with a tow dolly like the Demco Kar Kaddy SS # DM9713045 that you referenced. The great thing about this tow dolly is that it comes with everything and has it's braking system built into it using powerful disc brakes. So, I'm not quite sure what you are referring to in regards to clearing a a flat, 10 foot high back wall (maybe you meant inches?) but the Hollywood Racks Destination Bike Rack # HLY94FR does have a 9 inch shank rise, which should alleviate any concerns about clearances.
