There is no adapter to allow mounting the Thule Big Mouth bike carrier TH599XTR to oval bars unless they are Thule's AeroBlade or Rapid Aero bars. In that case you would use Thule adapter # Xadapt2.
For a carrier that is a direct fit to the Subaru crossbars (if you have the Subaru roof rack) use the Thule UpRide # TH599000. This carrier holds the bike at the front wheel. I have linked a video review of this carrier for you.

There are 2 hitches available from Curt that are confirmed to fit your 2020 Subaru Crosstrek.
A Class II hitch # C12184, it has a 1 1/4" receiver tube opening and is rated 350 lbs TW, and 3500 lbs GTW.
A class III hitch # C13382, it has a 2" receiver tube opening and is rated 525 lbs TW, and 3500 lbs GTW.

According to EcoHitch, the # 306-X7203 isn't a fit to for the 2021 Crosstrek, as there have been changes to the rear of of the vehicle between the 2018 model and the 2021 model that would prevent the hitch from fitting.

If I personally had to choose between the two, I'd go with the Thule # TH911XT. I actually prefer the looks of the # SA805BL Saris Bones, but I don't care for the way that the weight of the bikes and the rack rest on feet that small. Spreading the weight over a larger area like the Archway does lessens the chances that the vehicle will be damaged, and makes the whole unit more stable. Both rack manufacturer offers a limited lifetime warranty, so you really can't go wrong either way.
