The 119176KIT was discontinued some time ago and has been replaced with the # C59496. This kit will also work with your 2007 Volvo XC70. Unfortunately, we don't have a video of us installing it on your exact vehicle but it's the same basic process for any since it's a universal harness.

You can use absolutely any wiring harness with your Curt Hitch # C53HR since they're not tied together in any manner; Stealth hitches just give you an entire package and the big draw of those is that they're designed to only be seen when you're towing, which is quite important to some vehicle owners. With that said, in order to add a 7-way connector, you'll need to start with a 4 way since that gives you the base connections needed for a 7 way.

You are correct that wiring harness # 118739 for your 2014 Volvo XC60 does not have a connection for the reverse lights on the vehicle. You will need a 4 to 5-Way flat adapter, # 20036, to convert it to a 5-Way.
