I have the video I think you are talking about linked here on a 2016 Volkswagen Touareg. The video link shows the Tekonsha Prodigy brake controller part # 90885. The Touareg does require a pigtail from the Volkswagen dealership to install a brake controller. The driver side left lower panel does need to be removed. Once you get the panel removed there will be a black plug with the wires attached to connect to the parts from the Volkswagen dealership.

There is definitely a solution for you, though it could be that you have a sun roof and not a moon roof. This matters in terms of fit, because a moon roof slides into a cavity in the roof and does not extend above it, while a sun roof generally does extend above it.
