I have a 2007 Montana 3400 5th wheel and I dont know if it is 7K or 8K and how do I find that out and which do you suggest.

To find the correct Comfort Ride you'll need to take a look at the axle on your 2007 Keystone Montana 3400RL and find what it is rated for. Based on what I've seen I'm almost certain you have a 3 inch diameter axle and it should be rated for 6k to 7k but it's important to verify what is on your specific rig.
Assuming you do have that size axle what you need is the Roadmaster Comfort Ride Leaf Spring Suspension Kit w/ Shock Absorbers - Tandem 7K Trailer Axles # RM-2460-2570.
