The Ranch Hitch Universal Fifth Wheel to Gooseneck Offset Adapter, # AM3139, will technically work with your 2012 Chevrolet Silverado 1500 Short Bed as long as you have a gooseneck ball in your truck bed, but it will not prevent your trailer from hitting the cab of your truck when making sharp turns.

The main purpose of an offset gooseneck adapter is to create more space between the back of a truck bed and the trailer, not between the trailer and the cab of the truck.

If your primary concern is having the ability to make a sharp turn without hitting the cab, then you will want to replace the gooseneck hitch in your truck bed with a fixed fifth wheel hitch. You will also need to replace the pin box on your trailer with a Sidewinder pin box if possible. A Sidewinder pin box will move the pivot point of the trailer 22 inches behind the rear axle, which creates the clearance needed from the cab of your truck when making sharp turns.

If you are interested in going this route, I have attached a link to all of the fifth wheel installation kits and hitches that are recommended for your truck. I recommend using a custom install kit, like part # RP50064-58, because there is no frame drilling required and it will cut down on the installation time if you are doing it yourself or taking it to a shop. You will also want to choose a hitch that can handle the weight of your trailer.

I have also attached a link to our Sidewinder pin boxes. Sidewinder pin boxes are designed to replace OEM specific pin boxes, so you will need the manufacturer and part number of the pin box that is currently on your trailer. This information is usually located on a plate on the pin box. If you cannot find the pin box information, the trailer manufacturer can look it up with the VIN or serial number of the trailer or you can take a few measurements by following the help article I attached on measuring a pin box.

If you can tell me the manufacturer and part number of your pin box, or provide me with the necessary measurements I have indicated on the attached photo, I would be happy to make a specific recommendation for you.
