B&W Companion 20k or 25k for 2023 Chevy Silverado 3500 with factory pucks? Or does it matter much?

I'm going to assume you have a 5th wheel pretty close to 20,000 lbs, and so long as the hitch exceeds the GVWR - the total weight of your trailer - then either the 20k or 25k option will work. That said, I personally always prefer some cushion, so anything in the neighborhood of 17,500 lbs+ I would go with the 25k, if for nothing else than peace of mind.
But really, as long as the hitch exceeds the GVWR of your trailer, you're set, and the correct Companion for your 2023 Chevy Silverado 3500 with the factory pucks is one of the following (depending on the capacity you want):
