What would be the best set up with spare tire holder in the middle of bumper? I have a spare tire mounted on bumper in the middle, could I use the 24 on either side?

I recommend using either a 24x40 etrailer Cargo Carrier for RV Bumper # e99050 or 24x60 etrailer Cargo Carrier for RV Bumper # e99049 and moving the spare tire to either side of the bumper. You can see how the 40" wide carrier is installed with a spare tire on a travel trailer linked in the installation video below.

You will not want to use the 24" Extension # e99052 on either side as it only has one mounting point and no side rails to hold the cargo in place.

The only folding spare tire carrier we offer is the Stromberg Carlson Carrier part #TR-2 which only folds as far as the picture I attached. I couldn't recommend modifying this carrier to let it drop further as that would void the warranty.
