Will this mirror fit the 2019 Jeep Grand Cherokee Summit mirror profile? And not interfer with fold in.

While we don't have any custom fit tow mirrors that fit your 2019 Jeep Cherokee like the CIPA part # CM11401 that you referenced we do have universal tow mirrors like the CIPA part # CM11980-2 which we've test fit on similar Cherokees and found they fit well and would allow the mirror to still fold.
