Will this fit a Load Trail 12k gooseneck trailer? I have read a couple of reviews about an offset and it only fitting bulldog receivers.

You are correct, the Bulldog Gooseneck-to-5th-Wheel Trailer Coupler Adapter has a 15º offset. Instead, you could use something like the Gooseneck to 5th Wheel Trailer Coupler Adapter - Inner Tube - Round - 25K lbs, part # KPG5-R25-IP. This has a round inner tube with a 25K lbs weight capacity.

The tube of the Gooseneck to 5th Wheel Trailer Coupler Adapter #KPG5-R25-IP sits perpendicular to the square plate towards the bottom of it as depicted in the attached picture. The holes are perpendicular (at a 90 degree angle) as well.
