You are correct that you cannot use the factory cold side of stop light switch wire on your 2015 Chevrolet Equinox as it does not have enough voltage, so what you are going to need to do is use a circuit tester like # PTW2993 to test the wires of the BCM (Body Control Module) which should be under the driver side of the dash.
You will need to test each wire until you find the one that has 12v power only when the brake pedal is pressed, and connect the red wire brake signal wire of your Redarc Tow-Pro Elite # RED44FR.
Another option would be adding your own stop light switch, the Roadmaster Stop Light Switch Kit - Chevrolet Equinox / GMC Terrain # RM-751439 which would give you a fully functional stop light switch that will be really close to the rest of your controller wiring, and be pretty easy to install as it was designed specifically for your vehicle.
Lastly the yellow wire on the back of your 7-way connector is for the reverse lights, but since most trailers do not have reverse lights that wire is typically left unconnected and taped up out of the way. Although, if your trailer has a backup camera you'll want to connect this wire since the camera is activated by the revese light circuit.
I included a few videos of the products mentioned for you to take a look at.
