I purchased front/rear Sumo springs for my motorhome. Got injured before I could install the rear kit. Question: Is it safe to drive the RV with just the front kit installed? Thank you,

Yes, it's perfectly safe to drive an RV with just a front or rear set of SumoSprings installed. People frequently just buy them for one axle all the time and ride quality is still improved. If it was dangerous to only install one set they would always be sold in sets that include the front and back.
