For your 2011 Monaco Monarch, the two 6 volt batteries will be wired in series so your output will be 12 volts but your capacity remains consistent. I recommend connecting your batteries using the Deka 2/0 Gauge Overmolded Battery Cable Harness Assembly - 7" Long # DW04362. You will run this between the positive terminal of one battery and the negative terminal of the other battery with the positive terminal of that battery providing output to your components.
I've attached a diagram to assist. You will want to follow the one on the left that shows two 12V batteries creating 24V output. Yours will be two 6V batteries doubling output to 12V following the same wiring diagram. If you want a disconnect switch I recommend using the Bulldog Winch 400 Amp Shut-Off Switch - Removable Key # BDW20247 between the trailer and your batteries. Anywhere else would compromise your ground wire connection because they are connected in series.
