A 235/75R15 size tire will mount to a 15 inch wheel that features a width range of 6 to 8.50 inches. With this in mind, the Dexstar Steel Mini Mod Trailer Wheel # AM20545 that you referenced should work nicely with your off-road tires, as it features a 15 inch diameter and 6 inch width. This is a really nice, steel wheel with a modular design and a black powder coat finish. It has a bolt pattern of 5 on 4-1/2 inches.

Please note that it is recommended to only use Special Trailer (ST) tires on a trailer. ST tires feature a stronger sidewall than passenger vehicle tires so that it can handle the higher air pressures and higher loads that will typically be put on a trailer.

The closest trailer tire size to the 235/75R15 you mentioned is an ST225/75R15 like the excellent Westlake # LHWL304. This radial ply tire has a maximum load of 2,830 pounds at 80 psi and a maximum speed of 75 mph. I have attached a short video demonstration on this product, along with an FAQ on trailer tires that you might find helpful.

The Fulton Single Axle Trailer Fenders # F008585-2 that you also referenced will work nicely for either of these tire and wheel combination. The fender itself measures 10-1/4 inches wide, 45 inches long, and 14-7/8 inches tall.
