What is purpose for the 2inch front to back adjustment.

For the B and W Companion hitch part # BWRVK3300 that you referenced there is a bit of forward and back adjustment available for the head of the hitch. Being able to move the head back can help gain a bit of turning clearance since the nose won't be as close to the cab.
Since that additional clearance isn't always needed it can adjust forward to help distribute some of the trailer's weigh up to the front axle as well.
