I recommend taking a look at the Curt Multipurpose Ball Mount # D210. This is a unique ball mount that features a standard ball mount platform on the bottom and a 2 inch receiver at the top. Because of its design, this multi-purpose adapter will only reduce the capacity of your trailer hitch by 50 percent when the receiver portion is used by itself. Other similar adapters will reduce the hitch capacity regardless of how you use it. This unit features a 7,500 pound towing weight capacity and a 750 pound tongue weight capacity.
Then, to transport and secure the kayaks, you can use the Rhino-Rack T-Load Hitch Mounted Load Bar # RTL002, which will slide right into the top 2 inch receiver. I have attached a short video demonstration on this product so you can see exactly how it works.
You will also need to add a roof rack for the cab's roof to secure the other end of the canoes. If you can give me the year, make, and model of your truck, I will be happy to make a recommendation.
Another option to secure the canoes would be with a ladder rack that installs inside or on top of the truck's bed side rails. I can again make a more specific recommendation for this if you can tell me your vehicle information.

There does not appear to be enough clearance between the bike rack and hitch to remove the trailor prior to unloading or loading the canoe.
