Can I use a plug in wiring instead of hard wiring?

Yes. In fact all of the trailer wiring harnesses for the 2016 Chevy Equinox plug into the vehicle. You can use Tekonsha trailer wiring harness # 118494 to add a 4-Way flat connector to the rear of the vehicle. I have included a link to a video showing an example installation for you.
