The Draw-Tite 75122 will fit your 2001 GMC Safari. The different weight ratings are provided in the event that a weight distribution system is needed.

The hitch, when used with a standard ball mount and ball, has a 5,000 pound gross towing weight with a tongue capacity of 500 pounds. This is called the weight carrying capacity as the hitch is bearing all of the load by itself.

A weight distribution system goes into the hitch and uses a set of spring bars to apply tension and spread the load across the van frame. Since the load has been distributed, the hitch is not bearing all of the weight, hence the weight distribution capacity.

As long as the total loaded weight of your trailer is under 5,000 pounds and the tongue weight, vertical load the coupler exerts on the ball, is under 500 pounds than a weight distribution system is not necessary. However, if either of these figures is exceeded, a weight distribution system will be needed.

I have added a link to an FAQ article that explains Weight Distribution systems pretty thoroughly that should answer many of your questions.
