I checked with my technical contact at Curt Manufacturing, a prominent maker of trailer hitches, regarding your question about the dual exhausts on your 2004 Volvo S60R interfering with hitch installation. He confirmed that the dual exhausts will not cause any issues with installation of their 1-1/4-inch Class II trailer hitch # C12318.
Since the Draw-Tite hitch # 36297 that you referenced is pretty much identical to the Curt it too should bolt up without any issues related to the exhausts.
At right I have linked an installation video on a Volvo as well as two helpful articles concerning hitch installation.
