I did some research and did find a way to turn it off, but there is not a way to calibrate the system to recognize "common" items and this will need to be done every time the vehicle is restarted.

I have not had this issue pop up before and the Curt Echo # C51180 controller does require input for it to signal the brakes on the trailer to actuate. There will be absolutely no way for this to self actuate on its own.
With the accelerometer being set from Curt, there will not be a way to change how it activates, unfortunately. If this is a negative for you, I do recommend going with a hardwired option, which I actually prefer anyway.

It's true that a high-low adapter, like the Roadmaster # RM-076, will help reduce the height of the Thule EasyFold XT # TH903202 but the problem you're then looking at is the weight capacity of your hitch receiver is cut in half so if you're weight capacity is 350 lbs of tongue weight it'll be reduced to 175 lbs. If all of your signals are working there may be no need to connect the wire that is for the 12 Volt trailer power on the Tekonsha OEM Replacement Vehicle Wiring Harness with 7-Way Trailer Connector part # 118290 but I can not advise you to do anything except what is found in their instructions which states to connect the wire.
