You are correct the Thule roof rack kit, with the parts listed below, is the correct set for a 2017 Hyundai Tucson with flush rails. You should have plenty of room to open your sunroof but I do not know how tall it is when opened. However, I can tell you the Edge Clamp Feet item # TH89SC that attaches to your flush rails measures 3-1/2" tall including the rubber foot pad.
