I walked out to our warehouse and pulled the Redline A-Frame Trailer Coupler # CA5100B. At the widest point inside the coupler measured approximately 9-1/4 inches, the narrowest approximately 2 inches and 8 inches between those points. With the hitch on your 2007 Honda Odyssey you will have a distance of 5 inches from the center of the hitch pin out to the furthest point out on the rear bumper. So you will need a fold up rack that when folded up will have a distance of greater than 5 inches from the center of the hitch pin to the nearest upright bar.
There is a rack available that has enough clearance, but the Swagman XTC4 Bike Rack # S64665 only has a distance of 3 inches when folded so it would not work for you.

The height of the contents you load onto the Pro Series cargo carrier # 63153 can be about 18-inches give or take a couple to be on the safe side. It's tough to pinpoint the exact measurement and as long as you keep your gear below the taillights, you won't need a light kit. When we installed the Draw-Tite part # 75270 on a 2011 Honda Odyssey we found that there was a distance of 6 inches from the center of the pin hole out to the furthest point out on the rear bumper. Either way though the Yakima 4 Hitch Mounted Hanging Style Bike Carrier # Y02458 that you referenced has a distance of 8 inches from the pin hole to the upright mast so it should clear just fine.

Whenever you are towing, the weight capacity of your towing setup is limited by the lowest rated component. When I looked up the towing weight capacity of your 2007 Honda Odyssey it looks like the max trailer weight it could tow (with just one passenger in the vehicle) is 3,500 lbs. A weight distribution (WD) system that is properly tuned for the trailer weight and correctly installed will move some of the trailer tongue weight (TW) off the hitch and shift it forward to the tow vehicle's front axle. The hitch ball essentially becomes a pivot point - like the wheel of a wheel barrow when you lift the barrow's two handles.
With some of the TW shifted forward, a hitch then can, in many instances, handle more weight from the trailer tongue.... view full answer...
I took a look at the owners manual for your 2011 Honda Odyssey and it states that the maximum total trailer weight for your vehicle, with the ATF cooler installed and two passengers, is 3,500 lbs which you'll want to keep in mind.

Hitch manufacturers basically refuse to get into the specifics of the hitch extender capacity reduction for fear of people assuming they can carry more than they should based on hypothetical math problems. All of the hitches we offer for your 2011 Honda Odyssey have a 3,500 lb towing capacity. There aren't any available with a higher capacity. Even if there was I doubt your vehicle would have the needed capacity. Check your owners manual to see what the towing capacity is. Most likely it wouldn't be enough to tow a 5,500 lb trailer.

I went out into our warehouse and measured a Draw-Tite Trailer Hitch Receiver # 36417 for you and found that it measure 3-7/8 inches from the top of the bracket to the top of the hitch opening.
