According to Curt, the # C67JR Class III hitch fits all models of the 2021 Subaru Legacy, including the Premium and Sport. We offer two primary types of hitch for your 2020 Subaru Ascent. One installs so that the receiver tube sits up against the underside of he back bumper fascia with most of the hitch being visible from the rear of the vehicle. You're basically hit the nail on the head with the main differences between the Draw-Tite, part # 75673, and the EcoHitch, part # 306-X7162. The Draw-Tite is less expensive and is a great hitch, but the EcoHitch has a cleaner more OEM look to it. And you're also correct that there's no reason to worry about the weight capacity since you're limited to what your 2011 Subaru Outback can handle anyway.

In my opinion, if given the choice between the Swagman XC, # S64650, and the XTC, # S64670, I would go with the XTC every time. The upgraded wheel loops and rubber straps better secure the bikes than the wheel loops alone on the XC.

The difference between the Curt # 13390 and # C13206 hitches is that the 13206 sits up closer to the bumper by about 1/4" and the receiver sits out further to the back of the vehicle by about 1/8" - aside from that the dimensions are the same.
Curt made this redesign and just started listing the 13206 for the Subaru Outback Wagons starting with the 2014-2015 model year. Since Curt recommends the 13206 for your 2017 Subaru Outback Wagon that's what I recommend going with as well.

The Curt Trailer Hitch Receiver # C13410 will look better on your 2012 Subaru Outback Wagon than the Curt Trailer Hitch Receiver # 13390. Since the # C13410 has a hidden cross tube less of the receiver is visible.
When it comes to installation most will likely prefer the # 13390 as it does not involve removing the rear fascia to fit the receiver behind the bumper impact structure.
