I would be happy to help you compare those three hitch receivers and make a recommendation on which one you should select for your 2021 Subaru Forester. I have attached pictures for all three that will show you what they look like after installation. I have them labeled by the item numbers. I have also attached installation videos for each one. All three are class III hitch receivers and custom fit for your 2021 Subaru Forester. They will all attach to your vehicle using bolts that go directly into the frame and will not require any drilling or welding.
The EcoHitch Hidden Trailer Hitch Receiver item # 306-X7391 has a 10/10 on installation difficulty with a 2 hour minimum time required. This is by far the most difficult of the three receivers to install. It has a gross towing weight of 3,500 lbs and a maximum tongue weight of 525 lbs.
The Draw-Tite Max-Frame Trailer Hitch Receiver item # 76271 has a 6/10 installation difficulty with a 1 hour minimum time required. It has a maximum gross trailer weight of 3,500 lbs and a maximum tongue weight of 525 lbs.
Curt Trailer Hitch Receiver item # C13409 has a similar 6/10 installation difficulty with an identical time expectancy for installation. I recommend the Curt over the other two hitch receivers based on their proven reliability. It has a maximum gross trailer weight of 3,500 lbs and maximum tongue weight of 525 lbs.
You are going to need a wiring kit to control your trailers lighting functions. I recommend the Tekonsha T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector item # 118467. This T-One connector plugs directly into your Subaru's existing wiring requiring no cutting, splicing, or tapping or your vehicle's wiring system.
I recommend the Curt Towing Starter Kit for 2" Hitches item # C45534. This towing kit will provide you with a 2" Ball, a fixed ball mount with a 3/4" rise and 2" drop, and is rated for up to 7,500 lbs. It also includes a hitch pin and clip, hitch receiver lock with keys, hitch cover, and a storage case.
