Need to know right transom straps to buy for 7,000lbs boat + trailer unsure of trailer weight maybe 1500lbs

The purpose of most boat tie-downs is to strap the lightest object to the heaviest object, meaning you will want to choose a tie-down with a break strength that exceeds the weight of the lightest object. Your transom straps are used in conjunction with a gunwale strap and the winch strap to help secure the boat to the trailer, so it's not the only thing doing work to secure the boat.

If you've got roughly 8500-lbs of boat and trailer then using the BoatBuckle Heavy Duty Ratchet Transom Tie-Down Straps - 2" x 4' - 833 lbs - Qty 2 # IMF14207 on your trailer would be a good solution to secure the stern to the trailer. These have a break strength of 2500-lbs, which is more than your 1500-lbs trailer, so they're well rated for this application.
