Towing 2018 Buick Enclave on Tow Dolly
Question:
When you wait the 2 minutes, and unhook the negative terminal on the battery, will you have to reset all the stored info ie. clock, radio setting, seat adjustments?

Once the battery is unhooked, it's definitely possible that you'll need to reset the stored information such as radio settings and clocks, etc. This being said, I am puzzled by the part of the procedure where Buick states to open the hood, then wait two minutes before detaching the negative battery terminal. It makes me wonder if there's maybe a capacitor that saves those settings for you.
I searched online for quite a bit and wasn't able to find an explanation, so you might want to check with your Buick dealer for additional info about that.
The Demco # DM9713045 would be a good choice because of its disc brakes, but keep an eye on the weight of the vehicle. The dolly has a 4800 lb capacity, and I found online that the Enclave can vary in weight from 4359 to 4685 lbs, so you'll be pretty close to the capacity.
I've linked you to a demonstration video featuring the Demco # DM9713045 Kar Kaddy SS tow dolly.
