I spoke with my contact for you at Everchill and on your Everchill Refrigerator for RVs - 12V part # 324-000119 they do not recommend adding in your own switch. That being said they would likely give you trouble if you had any issues with the unit.

Not all hope is lost here though. I have a couple of solutions for you. If you're only trying to shut down the refrigerator then you can locate the fuse in your power distribution center and pull that fuse. That will stop power from being consumed by your refrigerator when you don't need it to be.

If your trying to stop all things from being powered using the Bulldog Winch 400 Amp Shut-Off Switch part # BDW20247 is an excellent option. This will give you the ability to stop all power coming from your battery and will prevent power draw when not needed. You will disconnect the battery. Cut your positive side cable and add one Spectro Ring Terminal - 4 Gauge - 3/8" Ring ID part # SWC57025Z to each end. At that point you'll install the BDW20247 in between and just pull the switch when you want to shut it down and put it back in when you're ready to use it.

I've included links to the product pages and videos for you to check out.

A follow up to this question/answer. When not connected to the tow vehicle or shore power will the refrigerator continue to run? Do I have to have a battery shut-off to keep the battery from running down?

If you have a trailer battery that the fridge is connected to then it will continue to run until the battery is drained.
