It really depends on the vehicle you are flat towing using a tow bar like the Roadmaster Nighthawk # RM-676 that you referenced as to whether or not the odometer will track the mileage. Late/current model vehicles typically have an electronic dash display that won't record miles when it's being flat towed since the key is usually in the off position.
If your vehicle has a mechanical odometer though, then it's going to track mileage just as if it were being driven like normal. If this is the case there's not really a way around this, and trying to alter it after the fact isn't recommended.
If you can tell me what vehicle you have, I will be happy to provide a more specific answer (as well as other components that will be needed to tow it). You might also check with a local dealer with your VIN and they would be able to tell you exactly how yours responds when being flat towed as well.
