When installing a gooseneck hitch on your 2020 GMC Sierra 3500 long bed, such as the B&W Turnoverball # BWGNRK1020 (which would be an excellent choice), you will want to position the hitch ball as stated in the installation manual. You should not adjust this location based on the type of adapter or hitch you plan on using, even with those like the Andersen Ultimate that feature an offset so that the actual connection point with the trailer will differ from the gooseneck ball location in the bed.

Andersen did account for this when designing their gooseneck adapter hitches and the offset does not create any issues with regards to moving this attachment point further behind the rear axle. Also keep in mind that the adapter base itself can be flipped around so that the offset goes towards the cab and not the tailgate. This is often how the hitch is mounted on long 8 foot beds like your Sierra.

I have attached the complete written installation instructions for the Turnoverball below that you can look through as well.
