1. How much does the roof rack add to the height of the wrangler? 2. How much is the clearance between the highest point of the wrangler roof to the lowest point of the cross bar?

I spoke with Rhino-Rack and they informed me that from the top of the roof to the bottom of the crossbar is 2-1/2" and 3-3/4" from the top of the roof to the top of the crossbar with the Rhino-Rack SG Roof Rack for Rain Gutters part # RRSG59 installed on a 2019 Jeep Wrangler Unlimited.

I have a 2019 Jeep JLU with a sky one touch roof. Does any manufacturer make a roof rail system that has enough clearance for the top to slide back(accordion) and clear the rack?

The best roof rack setup for your 2019 Jeep JLU with the Sky One Touch Roof is the Yakima RoundBar system that consists of parts # Y00409 and # Y00101. I have doubts that it will provide enough clearance for the top to slide back (I'm not sure any roof rack setup will) but there is a way you can verify this. The Yakima rain gutter mounts have an overall height of 7-1/4" and the Raingutter Spacers # Y01101 can be added to raise this another 3-1/2". So what you can do is take this measurement (10-3/4") up from the Jeep's rain gutters to see where the crossbars will sit - you can then slide the roof back to see if it stays under this height.
