How to Carry One Bike on the Back of a 2012 Roadtrek Motorhome

Can you recommend a rack to work on the back of my Roadtrek with the spare tire mounted on the back?

In order to recommend a bike rack that would clear the spare tire on the back of your 2012 Roadtrek Motorhome, I would need to know the distance from the center of the hitch pin hole to the outer edge of the spare tire carrier.
One option you have would be to use a single bike carrier like the RockyMounts MonoRail Solo 1 Bike Platform Rack part # RKY10007 and then a hitch extender like the Curt Hitch Extender part # C45791. The hitch extender will reduce the tongue weight capacity of the hitch by 50% but this might not be as big of an issue as the weight of a single bike and carrier (25 lbs) could still very will remain under 50% of the hitches tongue weight capacity.
If the distance from the center of the hitch pin hole to the outer edge of the spare tire carrier is greater than 11" then a hitch extender will be needed for the MonoRail Solo. If the distance from the center of the hitch pin hole to the outer edge of the spare tire carrier is less than 11" then the MonoRail Solo will not require a hitch extender.
