How much stopping power should I get out of my electric brakes? 50, 75 or 100 of the trailers weight?

That isn't the sort of figure that is factored into brakes. What you need to choose the right brakes is your axle's capacity, which is going to lead you in the right direction in terms of the brakes you need.
For example, a 3,500 lb axle capacity would need electric brakes # AKEBRK-35-SA whereas an 8,000 lb axle would use # 23-434-435.
