If you do not wish to add a trailer hitch or roof rack to your 2011 Honda Odyssey I recommend the Hollywood racks Over-the-Top rack # HRF2 for 2 bikes or # HRF2-3 for 3 bikes. You do not have to have a roof rack of any kind for these racks to work. I have linked a couple of videos for these racks for you.
If you don't mind adding a trailer hitch you could install # 75270 and use a hitch mount bike rack such as the Yakima FullSwing # Y02465. This bike rack will allow you to swing the rack off to the side of the vehicle, with or without bikes loaded, so you can open the rear hatch. I have linked videos on the hitch and the FullSWing as well.
For hanging style bike racks if you will be carrying any bikes that do not have a top frame bar that goes straight across (like a typical men's bike would) then I recommend using bike adapter bar # 64005. This will allow you to carry those bikes more level and will provide better ground clearance. I have linked a video showing how the adapter works.
