Out of the available EcoHitch options for your 2018 Subaru Outback Wagon I recommend going with the part # 306-X7601 which is a Class III hitch with a 2" receiver. This gives you access to more accessories than you would have it you used a 1-1/4" receiver.
The EcoHitch on a 2018 Outback Wagon should have 2-1/2" of clearance from the hitch pin hole to the furthest edge of the bumper. This means that you will be able to use the folding function of the Thule T2 Classic # TH9044-TH9046 as that puts the bike rack 4-1/2" from the center of the hitch pin hole.
Aside from making sure the bike rack shank fits the receiver (which in this case it does) that is really the only other measurement that needs to be taken to confirm a fit.
Please note that the T2 Pro XTR #TH69TX does come with a hitch lock for the rack and the bikes, so no need to worry about these.
