For your 2018 Chrysler Pacifica Hybrid, the Curt Trailer Hitch Receiver part # C13383 is a confirmed fit an will work well for you. The Curt option is a Class III hitch with a 2" receiver tube opening and is made right here in the U.S.A.

For a bike rack, I recommend the Kuat Transfer 2 Bike Platform Rack part # KU74FR. The Kuat Transfer has some really nice features. The rack has adjustable wheel cradles which will accommodate bikes with various wheelbases. It can be tilted downward with the bike attaches for access to the rear cargo area and can also be folded up for storage while not in use.
