The Econo Porch Trailer Step with Handrail and Landing - Triple - 7" Drop/Rise, 27-1/2" Tall # EHS-103-R are not going to work well on uneven ground. They are designed to be used on level or close to level applications.

For a step that will allow that uneven ground application while still giving you level steps, I recommend the TorkLift GlowStep Stow N' Go Scissor Steps w/ Landing Gear - 3 Steps - 350 lbs - Black Bracket # TLA7833. This will also give you the glowing assistance for dim lighting. You can add the TorkLift GlowGuide Handrail for Campers and RVs with GlowStep Scissor Steps # TLA7621 for the additional support and safety.

It is too small of a space to fit the TorkLift GlowStep Stow N' Go Scissor Steps w/ Landing Gear - 4 Steps - 375lbs - Black Bracket Item #TLA7834 but you can instead mount it to the bumper of your camper like in the attached picture.

Sounds like you'd want to go with a removable scissor setup like the Brophy Camper Steps part #AS24 which will need to be taken off it's mounting bracket between uses. This will give you total access to your trailer hitch when needed.
