Hi. I need a locking door latch to replace ours. How do I know which one fits a 95 morgan built horse trailer?

You will need to know the dimensions of your lock. For instance the Global Link RV Entry Door Locking Latch Kit with Keyed Alike Option - Black # 295-000019 has dimensions that are 3.47" wide x 4.28" tall. It fits doors that are 1-1/4" to 1-1/2" thick and installs into latch cutouts that are 2-1/2" wide x 3-1/2" tall to 3" wide x 4" tall.

For the size you listed it sounds like you need a full-sized door latch like the part #L3980 that mounts in door openings that are 3-3/8" x 4-5/8" hole. This is a very common door latch seen on horse trailer as well.
