Looking between the Demco Auto slider 18k or 21k? Do I add weight with toys water, fuel, ect or just add shipping and carrying weight to determine size of hitch?

On your 2017 Ford F-350 Super Duty and your Raptor 352TS Toy Hauler you could use either Demco Hijacker 5th Wheel Hitch.

Looking at all the information that you supplied, it looks like the total gross trailer weight of your trailer will be the shipping weight and the carrying capacity added together. In this case, the total gross trailer weight will be 16,840 lbs. This number will be the trailer fully load to its capacity.

At 16,840 lbs, the Demco Hijacker, # DM8550024 rated a 18,000 lbs, would be a perfect fit for you truck and trailer. The 14 inches of fore and aft travel you will give you the clearance needed to make turns without contact between the trailer and your truck's cab. I also like the hitch jaw of the Demco hitch. The single-hook jaw and bar provide an tight and secure king pin fit which will help eliminate trailer chucking that is seen in 5th wheel towing.

The Demco # DM8550038 hitch has all the same features as the other Demco Hijacker hitch, but this hitch is rated at 21,000 lbs. The benefit of the higher rated hitch is that if you need to haul a larger trailer at sometime this hitch will allow you to haul an extra 3,000 lbs. Also, for the extra weight capacity, the cost between the two hitches is not too significant.
