For your 2016 Subaru Crosstrek I recommend Curt trailer hitch # C13135. This is a Class III trailer hitch rated for 525 pounds tongue weight and 3,500 pounds gross trailer weight. Consult the vehicle owner's manual for the capacities of the vehicle and go by the lower rating. I have also included a link to a video showing installation of the hitch on a 2015 Subaru XV Crosstrek as well as a link to the installation instructions.
For this hitch the recommended ball mount is # C45230 with 2 inch ball # 40038 or 2-5/16 inch ball # C40007. The ball mount has a 2-1/2 inch rise or 3-3/4 inch drop. If the ball mount does not have the right rise or drop to tow the trailer level, use the link I have included that explains how to measure to choose a ball mount to tow the trailer level.
For a trailer wiring harness I recommend # 118467 for non-hybrid models or # C56243 for hybrid models to add a 4-Way flat connector to the rear of the vehicle.
