Question:
What hitch would you recommend for a Crosstrek towing a small boat under 1,000lbs.

If all you'll be using the hitch for is towing, I'd go with the Curt Class III hitch, part # C13135. If you're also planning on using the hitch as an attachment point for a hitch mounted accessory, the C13135 wouldn't be your best choice. All the Curt hitches available for your XV Crosstrek have a warranty stipulation that requires that a stabilizing strap like # 18050 be used for all non-trailer loads like cargo carriers or bike racks. The problem is, the stabilizing straps don't work well on vehicles that have a spoiler above the rear window like your XV Crosstrek. The strap would put stress on the spoiler, and would possibly damage it.
If you'll be using the hitch for carrying hitch mounted accessories as well as towing, Then Draw-Tite Class III hitch, part # 76084 would be a better choice, as the strap isn't required.
To complete your towing system, you'll also need the following:
Trailer wiring harness, part # 118467
For a Ball Mount use part # C45230
For a Hitch Ball, use # C40051 for a 1-7/8 or # 40038 for a 2 inch ball.
