The most popular hitch receiver for your 2007 Jeep Grand Cherokee Laredo is the 2-inch Class III hitch # 13251 from Curt. This installs without drilling, as do all other available hitches that you can see on the linked page. This hitch fits all GC models expect the SRT-8.
This 2-inch Cass III hitch gives you a higher capacity than smaller 1-1/4-inch types but also costs less than other Class III hitches. All required mounting hardware is included and an installation video is linked as well.
Towing will also require a ball mount, hitch ball and pin and clip. Curt recommends ball mount # C45030 but if you need one with more rise or drop you can refer to the linked article for help in choosing the right one to keep your trailer level when it is hitched. For a hitch ball you can use either 2-inch ball # 63845 or 2-5/16-inch ball # 63847 depending on which size matches your trailer's coupler. The size of ball required should be stamped into the coupler or appear on a sticker.
For a simple pin and clip use # C21500 or locking pin # e98880.
If your fishing cart has lights you'll need a wiring harness to power them. You can use the plug-and-play harness # 118425 from Tow Ready that simply plugs in at the GC's taillights. An install video is linked for you.
I also included a helpful article on towing basics that might be worth a read.
