The 16K Reese Fifth Wheel, part # RP30047, will work fine with a 2000 GMC Sierra, as will the Kwik Slide, part # RP30048. Fifth wheel hitches are not vehicle specific, but the installation hardware can be.
The Reese Universal Fifth Wheel, part # RP30035, can be used with virtually any truck, but requires more drilling than a custom kit would.
I am guessing you are purchasing the 16K Hitch and Kwik Slide from someone with a 2005 Sierra. After these two parts, you will need a bracket and rail kit then your fifth wheel hitch will be complete. For your 2000 model 2500, you would use part # RP50064-58. This kit includes that brackets that bolt to the frame and the rails that attach to the brackets and sit in the bed.
I have added a link to a video of this kit being installed on a 2004 GMC Sierra 2500 HD so you can see how it goes in. I have also included a link to the instructions that come with the kit so you can review them.
