I spoke with JR Products and they said for the RV LED Light Side-Slide Dimmer Switch # 37205-12315 the wiring goes as follows: White would go to the light, Black would be the ground, and Red would be the power.
However for hooking up to your trailer, we are not going to be able to tell you what goes to what because we don't know what those wires went to previously, and what they powered.

I checked with Lippert and the Lippert 122094 hub is a 12" hub with a 6 on 5-1/2 bolt pattern for 5,200 lbs - 6,000 lbs axles.
To replace the bearings you will want the Bearing Kit, 15123/ 25580 Bearings, 10-36 Seal item # BK3-100. You will need one per hub.

Your concern makes sense, but you can install the Adco Storage Skirt for 5th Wheel RV # 290-3502 on your Jayco North Point 377MBH without worrying about screwing into wires. It screws in at the very bottom of your overhang where no wires will be. The Bargman Tail Light # 30-92-003 has 2 wires that receiver power and 1 wire designed to be grounded. You'll need to find the tail light circuit on your Jayco Eagle and attach it to the green wire; you'll attach the brake light/turn signal wire to the black wire and then the white wire to the ground wire.
You may need to use a circuit tester like the # PTW2993 to find which wires correspond to which function.

In order to remove the old adhesive you might find it easier to heat the glue first and then try a combination of scraping or products such as rubber alcohol. Once gone, you can then apply the ThermaHeat RV Holding Tank or Step Heater Pad part # 277-000163. It's best to remove as much excess glue as possibly so the unit can attach securely and preform as intended.

The trailer battery has nothing to do with the exterior trailer lighting circuits. If you have an issue with your trailer lights which was caused from the trailer sitting then I would first start by tracing the wires for each light up to the trailer connector and then rechecking the grounds for each light as well. There are a few different ways to wire/mount an LED light strip like the LED Utility Light Strip part # DG52761 on the bottom of your 1998 Jayco Eagle 12SO. In regards to mounting, you can use the double sided tape present just make sure the mounting surface is clean.
