I was unable to find your order number, but the wiring harnesses that fit an '06 Odyssey do not have the extra plug/cap like you are showing. That said, from the photo it looks like that is just a cap for the plug, but that would be unusual because there's really no reason to have a cap on the T-connector like that.

The only fuse that gets installed for trailer wiring harness # 118753 for the 2018 Honda Odyssey is the one included with the kit for the power wire. Sometimes can end up getting bent in shipping which makes the install more challenging. Typically you can bend the hitch back as long as the paint doesn't end up flaking off or creasing as that would indicate fatigue. There is some trimming of the fascia required when installing on your 2020 Honda Odyssey when you are installing the Curt Trailer Hitch Receiver # C64NR.
The only trimming required is a 1.75" x4" section of the bottom appearance panel, which is separate from the actual bumper; trimming this section is needed for access to the frame and won't affect your Odyssey at all.

In order to avoid cutting into the bumper of your 2018 Honda Odyssey you would want Curt hitch # C13370. This is a Class III hitch with a 2" receiver and maximum towing capacity of 3,500 lbs. Sometimes weldnuts need to be cleaned, it can be spatter from when the frame was welded together or it could be paint or corrosion. To clean the threads out well, you can use a wire brush and some brake cleaner. Make sure you start the bolts so they are not cross threading the nuts.

Rather than using the # HM47200, I'd go with the # ETBC7L, which includes a 4-pole to 7-way adapter plus the wire and circuit breaker needed to run the power supply wire up to the positive battery terminal that's needed to power the Curt # C51180 wireless brake controller. You'll only need to run one wire from the adapter to the battery at the front of the vehicle, and ground the adapter's white wire to the vehicle. The remaining wires on the adapter won't be needed.

It sounds like the issue you are having is fuse related. We had a customer with a 2012 Odyssey just like yours leave us a comment saying that they had to use a different fuse location than what the installation instructions indicate to get all of the functions of the harness to work.
They said that the 2012 model required the 7.5A fuse to be placed in the small trailer slot vs the trailer back slot as indicated in the instructions. Another customer said they had to put a fuse in the trailer... view full answer...
The Hopkins # 47345 that you referenced is an adapter that plugs into a vehicle's 7-way and provides a 4-way for a trailer to connect to. There wouldn't be any wiring needed for use with this product so I am sure you are referring to a Hopkins 7-way like part # 37185 or the # ETBC7.
