Your current 5.7-8 tires are 5.7 inches wide and 18 inches in diameter. Moving to 145/80r12 tires would give you the same width, but a larger diameter of 21.1 inches. If you want to stay with your current size tires I've linked the page to all your options. This will give you a height difference of 3 inches and that reduces your wheel well or fender clearance by 1.5 inches. The difference between the Class II and Class III hitches has to do with their Gross Trailer Weight (GTW), their Tongue Weight (TW), and their Hitch Receiver Size. Class II trailer hitch receivers have a 1-1/4 inch receiver and can be rated up to 3,500 lbs in GTW and up to 525 lbs in TW.
