LED lights such as pancake light # 277-000339 are typically brighter than their incandescent counterparts. The light draws 3 watts which is comparable to a 30 watt fluorescent bulb so that should help you to determine if the LEDs will be brighter than what you have now. view full answer...
The Tekonsha Prodigy P2 Brake Controller, part # 90885 is a proportional brake controller that activates your trailer brakes in direct proportion to the brakes on your tow vehicle.

I do not recommend attempting to pull a 5th wheel with that vehicle. The Avalanche may have adequate towing capacity for smaller 5th wheel campers. My main concern is configuration of the truck bed and that it would not allow turning clearance. That being said I do not offer a 5th wheel hitch install kit that will fit this vehicle. Basically 5th wheel or gooseneck towing with this vehicle would be a no-go.

When you adjust your output to maximum on the Curt Venturer, part # C74VV the brakes will be applied aggressively but will not lock them up as you questioned. It is a time-delayed brake controller and will apply the brakes to aid in braking as you need.
