Yes, it really is just that simple. You will just plug the larger gray connector from the Tekonsha Wire Replacement, item # 3026-P, into the connector located under the dash and then plug the small black connector into the back of your brake controller.

Your 2018 GMC Acadia actually has blunt cut wires for you to splice in a brake controller like the Tekonsha Prodigy P3 # 90195. The last Acadia to use the Adapter # 3026-P that you referenced was the 2017 Limited which was the same as the 2016 model year. The 2017 New Body and newer have the blunt cut wires up under the dash.

We have a photo of the Draw-Tite Trailer Hitch # 76023 on a 2019 GMC Acadia, but we haven't had a chance (as of December 2021) to install this on a 2022 Acadia like what you have. It looks as if you were to drill holes into the tabs on the Demco Base Plate Pull Ear Covers part # DM5899 that you could then align them with the holes on the Demco Base Plate Kit. A bolt with nut or pin with clip could then be used to make sure the covers do not fall off.
