GM made a change to the OEM rail kits of their trucks between 2019 and 2020 so a hitch that fit a 2019 model truck would not carry over and also fit a 2020. In the installation instructions for the B and W Companion Rail Kit part # BWGNRK1012-5W that you referenced it states that some trimming of fender liners can be required. If you check out the install video that I attached around the 1:15 mark we show how to remove the fender liner so that the hitch can be installed.

You can swap out the slider base of your Companion for GM rail kit to the fixed base part # BWRVB3710 and in the rearmost head position you'd have enough turning clearance and save yourself a lot of weight! Due to the shock absorbing properties provided by the Gen-Y # 325-GH-8045 5th Wheel to Gooseneck Adapter Pin Box, it would be much less likely to cause damage than a rigid adapter. If you're concerned about damage, the best alternative is to avoid adapters all together and use a fifth wheel hitch but if that isn't feasible the Gen-Y adapter which is a compatible replacement for the Lippert 1621 pin box would be a good choice.

If you look in the bed of your 2016 GMC Sierra 3500 and see 4 pucks in a square/rectangular pattern then the truck has the factory towing prep package. It will look similar to the picture I have included.
If you have that in your truck bed then you can use a hitch that fits directly such as # C16545-16025. For a short bed model use the B&W Companion slider # BWRVK3770.

I'd say you are on the right track as you really want the fifth wheel pin weight to be right at 20 percent of the total trailer weight. Which for your trailer that weighs 10,500 lbs that would be right at 2,100 lbs.
So what I recommend you do is follow the picture I attached to determine how far exactly to move the axles. I'd do it for you but I don't know the distance from the tongue to the center hanger's center.
