We have better options because leveling jacks like the Ultra-Fab # UF48-979006 shouldn't be used to raise a vehicle. They're only for stabilizing despite their weight capacity.
Instead you want something like the Powerbuilt bottle jack, part # ALL640405. It has plenty of capacity at 4,000 pounds and is for raising a vehicle like your X5 to change a tire. It's also pretty compact and not very expensive.

I checked with Thule and the Motion XT XXL part # TH629906 is a fit for the factory crossbars of your 2019 BMW X5. To determine if this will allow the rear hatch of the vehicle to open you need to take one simple measurement. You need to measure from the center of the front crossbar back to the rear hatch seam. I attached a picture of the Draw-Tite # 76288 on an X5. It's from the install details so it isn't the best picture in the world but you can see the hitch. It actually has a ball mount inserted into it.

When Stealth Hitch did the engineering work and testing for the # AABRKT-3056 hitch, they determined that the weight capacity of the hitch was 8000 lbs. This could be limited by the capacity of the vehicle, if its less. When I looked through the owner's manual, 7209 lbs was the highest towing capacity I saw listed.

To upgrade from the Thule Hitching Post Pro # TH934XTR to a nicer bike rack I recommend selling your current one on your end (we don't have a buy-back system) and then upgrading to the Thule Apex XT # TH9025XT if you're looking to stick with a hanging-style rack.

Yes, the Draw-Tite Max-Frame Trailer Hitch Receiver # 76288 will fit your 2020 BMW X5 sDrive 40i. You are correct about the bulb out sensor and the adapter # C35FR. There are load resistors built into the adapter to provide more load so that you do not get that sensor. The solenoid should have enough draw without it but it might help.

The pin hole you should be using is the larger one. The smaller hole is not used.

The trailer hitch that you'll need to use for your 2020 BMW X5 is the Draw-Tite # 76288. The T-One Vehicle Wiring Harness # TK47FR is a little more plug and play compared to the wiring that comes with the Towing Kit w/ Ball Mount and Trailer Wiring for Stealth Hitches Hidden Rack Receiver # SH98VR, the wiring kits can't really be swapped out and unfortunately the Stealth Hitches kit has enough parts in it to warrant the need of the whole kit (like the ball mount and safety chain loops).

The Fulton Fold-Away Coupler Hinge Kit # FHDPB330301 that you referenced cannot be used with an aluminum-frame trailer. This is true for both weld-on and bolt-on kits. The issue is not due to difficulties related to welding aluminum (though this would be a separate concern) but rather has to do with welding different metals (with different melting points). In order to install a brake controller on your BMW X5, you really just need the brake controller, since you've already got a factory 7 way plug. The caveat here is that your BMW does not have a plug in adapter available to install a brake controller, so installation of a brake controller would require hardwiring into the vehicle's wiring.
